   Introduction

White mustard (Sinapis alba) is an annual plant of the family Brassicaceae. It is sometimes also referred to as Brassica alba or B. hirta. Grown for its seeds, mustard, as fodder crop or as a green manure, it is now widespread worldwide, although it probably originated in the Mediterranean region. Mustard prefers loamy or clayey loam soil. It is grown as rabbi crop in North India. It is raised during rainy season from July to November in South India. Flowering time: July–September


   Description

White mustard is an annual plant, with an erect stem and numerous branches springing from the main stem. Leaves are alternately arranged, petiolate and serrated, with short, white bristles along the veins. Flowers are pale yellow, forming a shape of a cross. Flowering occurs from June to August. Seeds are globular, dark reddish-brown.

Mustard is an annual herb cultivated as oil seed crop or as vegetable or as fodder, of which, 3 species are known for its condiment value. They are pale yellow or white mustard (Brassica hirta), brown mustard (Brassica juncea) and black mustard (Brassica nigra). The leaves of the plant are alternate, long, bristly branched, petiolate, hairy on both sides. Flowers are small, yellow with 4petals, cruciform. Seeds are 1.5-3mm.


   Uses for Natural White Mustard In Food Industries

 White mustard seeds are used whole to improve the preservability of pickles and soured     vegetables because they prevent the growth of mould and bacteria.
  White Mustard flour has preservative and antioxidant properties in addition to providing flavour     and colour.
  White Mustard can be used as a dipping sauce, marinade, or salad dressing.
  White Mustard used to enhance the flavors of many savory dishes such as chicken, salmon,   and other meats and fishes, potatoes, beans, and other vegetables, and also with spicy     breads and crackers.


   Medicinal use Of Natural White Mustard

  White mustard seeds are considered to be analgesic, carminative, expectorant and stimulant.   Traditionally, they have been applied in cases of digestive complaints. An infusion of the     seeds is useful in treatment of chronic bronchitis, rheumatism, muscular and skeletal pains (it     stimulates circulation in the pain area).
  White mustard is usually made into mustard plasters, poultices or added to the bath water.
  White Mustard tea is used for fevers and colds.
  It can also be used for skin eruptions.


   Health Benefits Of Natural White Mustard

 White Mustard has been used to treat headaches, cold and coughs, asthma and other     respiratory problems, lack of appetite, menopause, and other conditions. Some methods used     to treat such afflictions include mustard baths, applying mustard powder mix or paste to the     skin or chest area, a mustard tea, or by other consumption methods.
  white mustard oil is still used in a traditional manner, mustard oil may afford some protection    against cardiovascular diseases. In this sense "traditional" means that the oil is used fresh     and vegetable fats count only as a small percentage of the total caloric intake.
