   Introduction

Black Mustard Seeds form an integral part of Indian cooking especially South Indian cuisine. These are well known to make the dishes and chutneys hot, pungent and delicious.    Description

The spice is generally made from ground seeds of the plant, with the seed coats removed. The small (1 mm) seeds are hard and vary in color from dark brown to black. They are flavorful, although they have almost no aroma. The seeds are commonly used in Indian cuisine, for example in curry, where it is known as rai. The seeds are usually thrown into hot oil or ghee, after which they pop, releasing a characteristic nutty flavor. The seeds have a significant amount of fatty oil. This oil is used often as cooking oil in India. Also known as brassica nigra, nigra being the Latin word for black. These seeds have a very strong and distinct flavor, thus making them very popular in Indian and Southeast Asian dishes.


   Uses of Black Mustard

 Black mustard is commonly used as a spice or seasoning as well as beneficial oil in     naturopathy.
  It has been traditionally been used for treating scorpion stings and snake bites. Its properties     make it useful for epilepsy, toothache, bruises, rheumatism and respiratory problems.
  The spice is widely used for its flavor and aroma in the food processing industry. Mustard oil is     also used to cook lot of eatables and dishes.
  Mustard plasters are used as counter-irritants.
  Mustard is also useful in bath water or as foot bath.
  It is mainly used as a condiment and pickling spice.

  Powdered mustered is also useful for flavoring barbecue sauces, baked beans, many meat     dishes, deviled eggs, beets and succotash.
 Black mustard seed is used for causing vomiting, relieving water retention (edema) by     increasing urine production, and increasing appetite.
