Brown mustard seeds are also known as black mustard seeds. There are two major types of mustard seed: white (or yellow) and brown (Asian), A third species, the black mustard seed, has been replaced for most purposes by the brown species because the latter can be grown and harvested more economically. Black mustard is a round hard seed, varying in color from dark brown to black, smaller and much more pungent than the white. Some claim that during Roman times the word Sinapis started to be replaced by words such as Mustum, Mustarum, and Mustardum as new wine, or "Must" was mixed with mustard seeds to make a paste. Brown mustard is hot and pungent. The seeds are combined with cumin seeds and fried in oil until they pop, then added to various vegetable dishes and curries.


Mustard seeds are from the mustard plant, which is a cruciferous vegetable related to broccoli, Brussels sprouts and cabbage. While there are approximately forty different varieties of mustard plants, there are three principal types used to make mustard seeds: black mustard (Brassica nigra), white mustard (Brassica alba) and brown mustard (Brassica juncea). Black mustard seeds have the most pungent taste, while white mustard seeds, which are actually yellow in color, are the most mild and are the ones used to make American yellow mustard. Brown mustard, which is actually dark yellow in color, has a pungent acrid taste and is the type used to make mustard. Mustard seeds are sold either whole or as a ground powder. Its usage is only exceeded by the peppercorn. All parts of the plant are edible, including seeds, leaves, and flowers. Mustard Seed has a fresh aroma and slightly biting flavor but when the seeds are dried they do give any fragrance.

   Uses of Brown Mustard

» Mustard is used in Indian, French, German and Irish cuisines. Mustard is used in salad    dressings, egg dishes, cheese dishes, pickles and vegetables. Mustard is rubbed over meat     before roasting. It is also added to butter to give butter a pleasant flavor.
»  Mustard is regarded as a hot spice when used in blends. Brown mustard seeds are delicious     in dishes as mundane as boiled cabbage.
