  Introduction

Raisins are essentially the dried and preserved version of grapes. Just as there are many types of grapes - green, purple, red, globe, and champagne grapes to name a few - there are just as many types of raisins. However, the most common type of raisins is made from Thompson seedless grapes, which are green. These raisins range in color from dark plum to black. Golden raisins, which are generally yellow in color, are made from green grapes also, and are treated and processed differently to retain the golden-green color. Raisins are produced and consumed all over the world.


  Description

Raisins are simply dried sweet grapes, of course. All grapes are, however, not suitable for making raisins. The grapes, which are very sweet, are only selected for drying. Basically dry grapes are also known as kishmish, bedana, manuka or dry fruit. Raisins are seedless grapes which are quickly dried to preserve the golden color and fine flavor. The raisins contain 70% of pure fructose and on consumption and provide quick energy. These are fat free source of fiber and antioxidants. These sweetly flavored wrinkle textured raisins are made mainly by sun drying and tray drying. They are also treated with sulfur dioxide to preserve the light color as well as oven-dried to avoid the darkening effect of sunlight.

»  Raisins are used in salads, and also used in the bakery and confectionary and widely used in     the preparation of jams, jellies, cakes, puddings and pies.
» Raisins are a great addition to homemade granola or can be sprinkled over any breakfast     cereal, hot or cold.

»  Add raisins, almonds, peppers and onions to brown rice to make a tasty side dish.
