   Introduction

Garcinia Indica is a deep purple color fruit. It is popularly known as "Kokum" in India. The natural outer cover of the fruit is dried and used as a spice. It gives out tangy flavor since it contains citric acid, acetic acid, hydroxycitric acid, ascorbic acid, malic acid and garcinol. Kokum juice is very popular in India especially during hot summer. It is delicious and has a cooling effect on the body. It is very refreshing drink. It not only quenches your thirst, but also helps to prevents dehydration and sunstroke due to heat. Kokum is a sour fruit that resembles tamarind. In fact it is also known as 'Fish Tamarind' as it is added to the fish curry to make it sour especially in the Konkanese preparation and the cuisines of Travancore in Kerala. Actually the intrinsic acidic property of Kokam checks the unpleasant flavor of the fish.


   Description

 

Kokum is a slender evergreen small tree with drooping branches. It is a dioecious tree growing up to 18 mtr high. The fruit is spherical, purple, not grooved having 5-8 seeds compressed in an acid pulp. The Kokum tree is of tropical evergreen origin and is related to the mangosteens. It grows at a height 15m (50 ft) and has thin bark and elongated leaves. Kokum fruit is circular with a diameter of 4 cm and five-eight seeds. It is a sticky, purplish or blackish colored fruit with curved sides. Commercially the dry rind of the fruit is used. The darker the color, the better is the quality. When added to the preparation it lends a pinkish to purplish color and a sweet and sour flavor.


   Uses of Kokum in Food Industries

The ripened, rind and juice of Kokam fruit are commonly used in cooking. The dried and salted rind is used as a condiment in curries.

It is also used as a garnish to give an acid flavor to curries and for preparing attractive, red, pleasant flavoured cooling syrup. Kokam butter used as an edible fat, is nutritive, demulcent and antiseptic. The rind has antioxidant property.

  It has anthelmintic and anti-ulcer properties.

  Kokum juice improves the digestion and appetite. It is also used to treat piles and dysentery.
