   Introduction

Mango (Mangifera indica L.), which belongs to the family Anacardiaceae, is one of the most cultivated fruit in the world. Mango is called the king of all fruits because of its rich, luscious, aromatic flavor and a delicious taste in which sweetness and acidity are delightfully blended. It is the most popular and the choicest fruit and occupies a prominent place among the fruits of the world. Mango graces many supermarket produce sections as a highly desirable and exotic fruit, yet it is currently being employed in forms other than its conventional state. Mango powder is a prime example of this trend.


   Description

Mango powder is a spice made by grinding dried mango. The powder preserves the acidic, tart and spicy flavour of unripe mangoes. The mango tree is a member of the family that includes the cashew and pistachio nut. India is one of the largest producers and consumers of Mango Powder. Andhra Pradesh and Uttar Pradesh are one of the major amchoor or mango powder producing Indian states The dried slices are light brown with a rough surface. Ripe mango slices are also dries and are orange brown. Amchur powder isfinely ground but with a slightly fibrous texture. It is beige in colour. Bouquet Sour- sweet, warm and slightly resinous.


   Mango Powder Uses in Food Industries

  Mango powder enhances the taste of chicken and fish dishes.
  It is a souring agent like tamarind and has tenderizing qualities like lime juice.
  Aamchur can be used instead of tamarind to prepare sweet-sour dal or sambhar.
  It can also be used to marinate chicken, meat, fish and pork.
  Aamchur is used to flavor kebabs, seekhs , grilled chicken, baked fish and all barbecue items.
  mango powder used to add flavour too dum aloo (potato preparation) and biryani ( rice mixed     with vegetable or chicken or meat).
  It is also used to make refreshing drinks including jaljeera etc.
  It is used to make various curries, chutneys and pickles.

  It is a fair source of Vitamin A and Vitamin E which helps hormonal system function efficiently.
  Mango Powder has high Vitamin C content and is very effective in treatment of Vitamin C     deficiency disease – Scurvy. One part of Amchur mixed with two parts of Good lime is one of     the home remedy for Scurvy.
  It combats acidity and improves digestion.
