   Introduction

Rajma is a very popular dish from the North Indian cuisine made of red kidney beans. The kidney beans is also known as the chilli bean and its dark red in color and the visually resemblance the shape of a kidney. It is sometimes also known as red bean.


   Description

 

The kidney bean otherwise called “the chili bean” with its dark red skin is named for its visual resemblance to a kidney. The kidney bean is also known as the red bean, although this usage can cause confusion with other red beans. Red Kindly beans are an integral part of the cuisine in northern region of india. Characterized by a strong flavor and a color that is reddish brown in nature, the kidney bean is a versatile kidney shaped bean that can be used in a variety of hot and cold recipes. Kidney beans grown in many different location, and is usually sold in dry or canned varieties. While a true kidney bean is dark red/brown in color, a light red bean, phaseolus vulgaris, is often referred to as a light red kidney bean, owing to the similar shape and texture. Kidney beans are often an excellent dietary selection, as they contain no excellent dietary selection, as they contain no cholesterol. As a source of potassium, kidney beans provide a source of nutrition that is similar to that of a potato, but with only a moderate amount of carbohydrates. Kidney beans also contain trace amount of iron and calcium.


   Use of Red Kidney beans/Rajma In food industry

»  One of the most popular uses for kidney beans is in preparation of chili. The deep red color     works well with the other ingredients of the dish, and adds excellent texture and taste.
»  Kidney beans are also a favorite in preparing refried beans, an excellent accompaniment to     any Mexican style dinner. Serving kidney beans cold is also a popular option.
»  Marinated bean salads often include kidney beans. A popular and nutritious cold salad involves     the use of dark red kidney beans, chickpeas, chopped onion, and slivers of yellow bell pepper.
»  The vegetables are tossed in a dressing made with olive oil, and various spices. This mixture     can be served over cold pasta or on a bed of salad greens. Dried kidney beans are sometimes     preferred over the canned variety.

»  Kidney beans are a very good source of cholesterol-lowering fiber, as are most other beans. In    addition to lowering cholesterol, kidney beans' high fiber content prevents blood sugar levels   from rising too rapidly after a meal, making these beans an especially good choice for     individuals with diabetes, insulin resistance or hypoglycemia.
» Kidney beans are an excellent source of the trace mineral, molybdenum, an integral     component of the enzyme sulfite oxidize, which is responsible for detoxifying sulfites.
