   Introduction

Peppercorns are the fruit of Piper Nigrum, an evergreen climbing vine. Black, white, and green peppercorns all come from the same plant, but they are harvested at different times and handled in different ways. To make black pepper, the clusters are plucked when they are not quite ripe. They are then left in piles to ferment.

To make white pepper, the berry is picked fully ripe. Its outer shrunken skin is rubbed off, exposing the dried, grayfish-white pepper inside. White pepper has a milder, more delicate flavour than black pepper, and is useful for adding a peppery flavour to light-colour sauces and soup without adding black colour. White pepper is popular in European cuisines.


   Description

 

White pepper consists of only the inner seed with the pericarp removed by soaking and rubbing or by decorticating when dry. To make white pepper, the berry is picked fully ripe. Its outer shrunken skin is rubbed off, exposing the dried, greyish-white pepper inside.

White pepper has a milder, more delicate flavour than black pepper, and is useful for adding a peppery flavour to light-colour sauces and soup without adding black colour. More expensive white pepper is hotter than black because it contains more piperine, the volatile oil that gives pepper its characteristic flavour. White pepper contains slightly less essential oil than black pepper.

»  White pepper is commonly used in light colour European dishes like casseroles, pies creamy     shrimp and scallop sauces, mayonnaise, cream based soups.
