   Introduction

Aniseed, also called Anise (pronounced “ann-is”) is the fruit or seed from the flowering plant, Pimpinella anisum. This herbaceous, flowering annual plant is a member of the parsley family, and related to caraway, dill, cumin, and fennel. Aniseed is native to the eastern Mediterranean region and has been highly valued since ancient times. Aniseeds have a distinctive licorice-like flavor and have been used for medicinal purposes throughout history, especially as a digestive aid. The seeds are also used whole or crushed as a flavoring in various foods, from baked goods and sweets to liquors such as the infamous absinthe or the Greek liqueur ouzo.


   Description

Anise is an annual plant, which grows about 18 inches to 2 feet high. It has feathery leaves; the lower leaves are broad, toothed and triangular with upper leaves that are smaller, divided and narrow. It has umbrella-like clusters of dainty, creamy-white flowers and thin roots. The seeds are grey-green to brownish, ribbed and ovate, measuring 2 -4 mm (.08 -.16 in) long they have the flavor of licorice and the aroma of sweet fennel. Though the seeds have a strong licorice-like taste and odor, the anise plant is not related to the European plant whose roots are the source of true licorice. Chinese Star Anise is botanically unrelated to anise, but because it has a similar taste and aroma, it is often used as a less-expensive substitute for anise in baking and liquor production.


   Uses of Aniseed

»  Aniseed has a wide range of culinary applications, both sweet and savory. In the Middle East    and India, anise is used in soups and stews, and various cuisines use anise in seasoning     blends such as curry, hoisin, sausage and pepperoni seasonings.
»  It is also used to compliment duck, pork or fish, either alone or sometimes in combination with     cinnamon and bay leaves.
»  Anise is also used whole or crushed in cakes, cookies, pastries, sweet breads and candy.
» Aniseed is also used in anise-flavored liqueurs (such as raki, arak and ouzo). Along with    Grande wormwood and Florence fennel, geen anise is one of the main herbs in the infamous     liquor.
»  The seeds can be used roasted as a breath sweetener.
»  It is often an ingredient in dog food.
