   Introduction

Clove is one of the oldest spices in the world, is the dried, unopened flower bud of a small evergreen tree. It is indigenous to the Moluccas Islands of Indonesia. The clove, Syzygium aromaticum (also known as Thunb) is a native of Koluccas or Spice Islands and belongs to the family Myrtaceae. Zanzibar, Pemba, Madagascar and Indonesia produce large quantities of cloves.


   Description

 

Cloves are the immature unopened flower buds of a tropical tree. When fresh, they are pink, dried, they turn to a rust-brown colour. Measuring 12-16 mm (1/2”-5/8”) long, they resemble small nails, with a tapered stem. The large end of the clove is the four-pointed flower bud. The dried flower buds are called cloves. Natural Clove is a small reddish brown flower bud of the tropical evergreen tree Syzygium aromaticum. The tree reaches the height of 14 m Cloves are the rich, brown, dried, unopened flower buds of Syzygium aromaticum, an evergreen tree in the Myrtaceae family.


  Uses of Clove Powder

»  Green cloves are used for pickling. The inferior cloves and rejects during harvest are used for     distillation of clove oil, the active principle being 'Eugenol'.
»  It is used in the preparation of soap, perfumery and for microscopic work. Due to its antiseptic     property clove oils is invariably an ingredient in tooth pastes and mouth washes.
»  It helps in digestion and is antiseptic, antispasmodic and counter irritant and particularly a     local antiseptic in tooth aches.
»  Cloves can be used in cooking either whole or in a ground form, but as they are extremely     strong, they are used sparingly.
»  Cloves have historically been used in Indian cuisine (both North Indian and South Indian). In     North Indian cuisine, it is used in almost all rich or spicy dishes as an ingredient of a mix     named garam masala, along with other spices, although it is not an everyday ingredient for     home cuisine, nor is it used in summer very often.
»  It is widely used for food flavoring and aroma in a variety of cuisines, used in confectionery and     other products.
