Dill is an aromatic herb with delicate, feathery green leaves. Sometimes referred to as dill weed, dill is a member of the parsley family. While it is possible to buy and use dried dill, dill is one of those herbs that lose its flavor rapidly, so fresh dill is always your best choice. The seeds of the dill plant can also be used as a spice. Dill seed is used in a number of Asian and Middle Eastern cuisines.



Dill is a herbaceous annual with pinnately divided leaves. The ripe, light brown seeds emit an aromatic odour. The leaves have pleasant aromatic odour and warm taste. Both seeds and leaves are valued as spice. Dill seed brown in color. It is oval shaped seed with with one side flat having two ridges. The other side of the dill seed is convex. The convex side has three ridges and three oil channels. The size of the seed is around 5 mm (0.15 in). The leaves and stalks of the dill seed is aromatic. They are used for pickling. The flavor of the seed is slightly bitter which is similar to caraway

   Uses of Dill in Food industries

  Dill seed is used both whole and ground as a condiment in soups, salads, processed meats,     sausages and pickling.
  Dill stems and blossom heads are used for dill pickles.
  It is used as a spice, with a flavor somewhat similar to caraway but also resembling that of     fresh or dried dill weed. Dill seeds were traditionally used to soothe the stomach after meals.

  Dill is used mostly as a stomach soother and anti-gas remedy.
  It is also said to increase mother's milk and help treat breast congestion from nursing. It is     mild, and makes a good remedy for colic in babies.
  Seeds and oil are used in indigenous medicinal preparations. The emulsion of dill oil in water is     an aromatic carminative
  Dill can also be used along with anti-spasmodic herbs like crampbark, used for menstrual pain,    similar to the way the caraway herb is utilized. Lactation is increased by dill and all nursing   mothers can help avoid the chances of colic in suckling babies by regular use of the dill     remedy.
