   Introduction

Ginger has been used for thousands of years in Chinese medicine to treat stomach upset, nausea and diarrhea. Ayurvedic medicine utilizes it for the treatment of arthritis. Other traditional uses of ginger include colic, colds, fever, menstrual cramps and appetite stimulant.    Description

 

Ginger is a deciduous perennial with thick, branching rhizomes and sturdy, upright stem with pointed lance-like leaves. Yellow –green flowers, with a deep purple lip with a yellow marking are produced Ginger powder is obtained by pulverizing dried ripe fruits of Zingiber officinale. India produced ginger powder which is fine-ground, light yellow renowned for its subtle lemon like aroma and sharp, biting flavor. Ginger (Zingiber officinale L.) is an important commercial crop belonging to the family Zingiberaceae grown for its aromatic rhizomes which are used both as spice and medicine.


   Uses of Ginger in Food Industry

  Ginger is also used in puddings, jams, preserves and in some drinks like ginger beer, ginger     wine and tea. Pickled ginger is a delicious accompaniment to satays and a colorful garnish to     many Chinese dishes.
 Ginger root is used today to provide relief for symptoms of motion sickness including     sweating, vomiting, dizziness, and nausea.
